Origin of Ingredients

At Almacena, we believe that knowing where ingredients come from matters. Not just for transparency, but because origin defines flavor, quality, and how food is cooked.

We don't aim to have everything. We aim to have the best within each category.

How we select our ingredients

Every product that enters Almacena undergoes a careful selection process. We focus on the true quality of the ingredient, ensuring its origin is clear, and verifying consistency between the product and its traditional use, when applicable. We don't make decisions based on trends or flashy labels.

If an ingredient doesn't meet our standards, it simply doesn't make it in.

Local and regional ingredients

Whenever possible, we work with local producers in Baja California Sur and with regional producers throughout Mexico. We love incorporating local ingredients when they meet our quality and flavor criteria. Each product is chosen intentionally, seeking a balance between origin, quality, and performance in the kitchen.

Supporting local businesses is important to us and is part of our identity. At the same time, we strive to showcase the best that Baja California Sur has to offer: products that, in addition to being local, stand out for their exceptional quality, flavor, and character.


Imported ingredients

Some of the ingredients we use or sell are not produced in Mexico or reach their best expression in specific regions of the world. In these cases, we work with suppliers from areas renowned for their tradition and quality.

The decision to import is not about luxury or exclusivity, but about respect for the ingredient and the way it should be used.

Is everything organic?

Not necessarily.

Some of our products are certified organic, others come from responsible agriculture, and still others from small producers who work on a small scale without formal certifications. We evaluate each case individually and do not use the word "organic" as a selling point unless it is substantiated.

We prefer to be honest rather than exaggerate promises.

Transparency in labels

Whenever possible, we indicate the country or region of origin, the type of ingredient, and its recommended use. For bulk products, our team is available to answer any questions regarding origin, storage, or preparation.

Information matters, but it also matters that it is clear and useful.

Artisanal production and small batches

Many of our products are made in small batches and may have natural variations in color, size, or flavor. These differences are not defects, but rather a sign of a genuine, non-industrialized product.

We believe that absolute standardization is not always synonymous with quality.

Our commitment

If an ingredient is in Almacena, it's because we would use it in our own kitchen, it meets our standards, and it has a clear reason for being here.

We don't sell refills.

We don't sell fashion.

We sell standards.
